BREAKFAST INSPO

A week of breakfast inspiration *chef's kiss*
EGGS AND BERRIES for the on-the-go mornings
- on a low heat, drizzle olive oil into pan
- crack two eggs
- cover pan with lid
- let cook until eggs are not runny
- season with salt, pepper, red, chili flakes
- optional to add green onion on top
- fresh berries on the side
CHICKPEA AND ARTICHOKE TOAST talk about protein
- rinse and dry chickpeas
- mash chickpeas and chopped artichoke hearts together
- season with salt, pepper, red chili flakes
- toast your favorite bread (I'm a sourdough gal)
- spread mashed chickpeas and artichokes onto bread
- add a spritz of lemon juice on top
- optional to add green onion on top
BANANA CHOCOLATE CHIP OATMEAL a classic indeed
- prepare your oatmeal (I like Trader Joe's instant oats)
- add a splash of oat milk and mix together
- top oatmeal with slice banana, cacao nibs, and cinnamon
AVOCADO AND EGG TOAST sometimes simple is better
- toast your favorite bread (I like to do this on the stove top)
- mash avocado on top of toast
- season with salt, pepper, red chili flakes, garlic powder
- on a low heat, drizzle olive oil into pan, and crack an egg
- cover pan with lid
- let cook until egg is not runny
- top toast with egg
FRUITY YOGURT BOWL i have a whole post dedicated to this one
VEGGIE EGG SCRAMBLE for the veggie lover
- sauce mushrooms in a pan
- add diced red pepper and onion to pan
- add spinach to pan
- crack two eggs over pan and stir frequently
- season with salt, pepper, red chili flakes
BLUEBERRY PANCAKES if you're into the sweet stuff
- feel free to make pancakes from scratch,
but I am lazy and prefer Simple Mills Pancake Mix
- sprinkle frozen *very important to be frozen* blueberries into batter
- pour batter into pan and cook until browned on both sides
- top off with a drizzle of maple syrup
