SWEET POTATO SALAD

A fall staple.

INGREDIENTS
- spinach or mixed greens
- sweet potato
- brussel sprouts
- mushrooms
- red onion
- parmesan cheese
- walnuts
- for the vinaigrette: lemon juice, olive oil, minced garlic, dijon mustard, dash of honey, salt & pepper
INSTRCUTIONS
- roast sweet potato (I used an airy fryer @ 400 degrees for 20 minutes)
- sauté mushrooms & onion
- mix together the vinaigrette ingredients to taste & set aside
- in a bowl, make a bed of spinach or mixed greens
- add sweet potato, brussels, mushrooms, onions, shredded parmesan, and crushed walnuts
- top with the lemon vinaigrette
& enjoy!
